Oatmeal Raisin Power Balls

This recipe uses honey for the binder/sweetener. You can also use maple syrup which, in some circles is a better, safer sweetener. Try it both ways. Honey will give it a sweeter flavor. You can also use pitted dates to sweeten these little yumsters.

~ Ingredients

  • 1 cup dry oats (I like 1/2 old fashioned oatmeal and 1/2 quick cooking)
  • ¼ cup almond butter
  • ¼ cup honey (or 6 dates, or ½ cup of maple syrup)
  • ¼ cup raisins
  • ¼ cup chopped pecans
  • ¼ cup toasted coconut
  • ½ teaspoon ground cinnamon
  • ½ teaspoon cocoa powder
  • dash of salt
  • ½ teaspoon vanilla
  • Options: chia, flax, protein powder

~ Method

Add all ingredients to the bowl of a food processor and process until well combined. Use a spoon to scoop about a Tablespoon of the mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 power balls. Store covered in a covered container in the refrigerator.
