Grilled Pork Tenderloin

Pork Tenderloin on Cutting Board

Ingredients ~

  • 1 pork tenderloin
  • 1 Tablespoon extra-virgin olive oil
  • Salt
  • 3 Tablespoons butter
  • 2 sweet onions, finely chopped
  • 1 Tablespoon ground cumin
  • Juice and grated peel of 1 orange
  • 2 Tablespoons honey
  • 1 cup rice
  • ¼ cup chopped cilantro

Method ~

Grill the tenderloin using the ‘indirect method.’  To accomplish this on a gas grill, set the top and bottom burners to medium and the middle burner to low.  Put the tenderloin in the middle of the grill and turn every 7 minutes for a total grilling time of about 30 minutes or until the internal temperature is 16o degrees for medium-well and 170 degrees for well-done.

Serve with Risotto or grilled vegetables; diced peppers, asparagus, onions, etc.
