Curried Chicken and Broccoli

Ingredients ~

  • 4 boneless, skinless chicken breasts
  • 2 – 10 ounce packages of broccoli spears
  • 2 – 10 ounce Cans Cream of Chicken Soup
  • 1 cup mayonnaise
  • 1 teaspoon lemon juice
  • 2 Tablespoon curry (or more—to taste)
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup bread crumbs

Method ~

Boil the chicken in water for 20 minutes.  Defrost broccoli, if needed.  Place in the bottom of the casserole.  Arrange the chicken on top of the broccoli.  In a mixing bowl, blend together the Cream of Chicken Soup, mayonnaise, lemon juice and curry.  Sprinkle the cheese over the top.  Sprinkle with bread crumbs.

Check your blood pressure, then bake uncovered. Bake at 350° for 25 minutes.
