Creamy Tomato Herb Soup

Tomato Soup

Ingredients ~

  • ½ onion, diced
  • 2 cloves garlic, chopped
  • 1 teaspoon ground rosemary
  • 2 Tablespoons butter
  • 2 teaspoons basil
  • ¼ teaspoon white pepper
  • 20 ounce can of tomato sauce
  • 2 tomatoes, chopped (or several grape or cherry tomatoes chopped)
  • 2 cups water
  • 1/3 cup honey
  • ¼ cup cream cheese (if low-fat is desired, use Neuchâtel NOT reduced fat cream cheese
  • s low-fat cream cheese curdles in this soup)
  • 1 cup sour cream
  • Salt to taste

Method ~

Sauté the onion, garlic and rosemary in butter until soft.  Add remaining spices, tomato products and water.  Simmer until heated.  Add the honey, cream cheese and sour cream.  All at least 30 minutes for the cheese to blend with the rest of the soup.  Adjust seasonings to taste.
