This Granola (Is Just Nuts!) with Cinnamon and Maple

Originally from the great folks at Paleo in 28, this is actually an ‘oat free’ version. If you love nuts, seeds and cinnamon with a touch of maple, you’ll love this. Enjoying this makes it very difficult to multitask. Focus on this!

~ Ingredients

  • 12 cups mixed raw nuts (Archer Farms – Target – has a 30 ounce container of “Raw Mixed Nuts)
  • dash of sea salt
  • 2 ¼ cups maple syrup
  • 3 Tablespoons vanilla
  • 6 Tablespoons coconut oil
  • 3 Tablespoon cinnamon
  • 1 ½ cups (unsalted) sunflower seeds
  • 1 ½ cups dried cranberries

~ Method

  1. In a food processor, grind mixed nuts. Add the rest of the ingredients and combine well. Place on a baking lined with parchment paper, spreading evenly.
  2. Bake for 2 – 2 ½ hours at 225 – 250 degrees F stirring two or three times.
