Cashew Sauce

Cashew Sauce

Ingredients ~

  • 2 cups unsalted cashews
  • 1 ¼ cup water or broth
  • 1-2 cloves garlic
  • Scant pinch of salt

Method ~

Cover the cashews with water in a bowl and soak for 2 hours or so; do not soak overnight.

Drain and rinse thoroughly. Place the soaked cashews in the bowl of a food processor or blender with the water, garlic, and salt. Puree until very smooth. You can thin this out with more water to your desired consistency. Store in the refrigerator for up to 4 days, or freeze.
