Black Bean and Corn Salad

Ingredients for Salad ~

  • 4 cups (2 cans) black beans, drained
  • 1 bunch green onions
  • 1-2 fresh jalapeno pepper(s), seeds removed
  • 3-4 T fresh cilantro, chopped
  • 1 can (4 ounces) green chilies, drained, chopped
  • 24 ounces frozen corn
  • 6-7 Plum or Roma Tomatoes, diced

Ingredients  for Dressing ~

  • Juice of 1 lime
  • 6 Tablespoons Salad Oil
  • 1 ½ teaspoon Cumin
  • salt and pepper

Method ~

Mix together and chill for 1-2 hours before serving.
