Asian Slaw with Spicy Peanut Dressing

Ingredients for Dressing ~

  • 1/3 cup natural-style creamy peanut butter
  • 1/3 cup peanut or vegetable oil
  • 1/3 cup seasoned rice wine vinegar
  • ¼ cup light brown sugar, firmly packed
  • 3 Tablespoons soy sauce
  • 2 Tablespoons fresh ginger, peeled, finely grated
  • 4 cloves garlic, pressed

Dressing for Salad ~

  • ½ head green cabbage, thinly sliced (about 6 cups)
  • ¼ head red cabbage, thinly sliced (about 2 cups)
  • 2 red bell peppers, cut into strips
  • 2 large carrots, peeled and shredded
  • 6 green onions, thinly sliced
  • ½ cup cilantro, shopped
  • Salt
  • ½ cup roasted peanuts, chopped

Method ~

Dressing: Whisk the dressing ingredients together in a small bowl

Salad: Combine the cabbages, bell peppers, carrots, green onions, and cilantro in a large bowl. Add the dressing and toss to coat. Season with salt, if necessary. (This can be prepared several hours ahead. Cover and chill.)

To serve, transfer the slaw to a large shallow bowl and sprinkle with peanuts.
