Enchilada Sauce ~ 5 Minute Blender Version

Ingredients ~

  • 1 – 28 ounce can whole peeled tomatoes
  • 1 cup water
  • 3 Tablespoons chili powder
  • 3 Tablespoons taco or homemade Southwestern seasoning
    • 2 Tablespoons chili powder
    • 2 Tablespoons paprika
    • 2 Tablespoons ground cumin
    • 2 Tablespoons kosher salt
    • 1 Tablespoon garlic powder
    • 1 Tablespoon ground coriander
    • 2 teaspoons ground red pepper
  • 1 small onion, chopped
  • 3 cloves garlic
  • 1 jalapeño, ribs and seeds removed
  • ½ teaspoon salt, (more to taste)

Blender-Enchilada-Sauce-1

Method ~

Everything goes into the blender. Blend until smooth.

Notes ~  For extra flavor and depth, simmer it all together for a while, maybe 15-30 minutes. But you can use it right out of the blender, too. This freezes just fine! With gratitude to Pinch of Yum
