Baking Powder Biscuits

Baking Powder Biscuits 

Ingredients ~

  • 2 cups all-purpose flour 
  • 3 teaspoons baking powder 
  • 1 teaspoon salt 
  • ¼ cup shortening (butter)
  • ¾ cup milk or half and half

Method ~  

Preheat the oven to 450°.

In a large bowl, mix together the flour, baking powder and salt.  Cut in the shortening thoroughly, until the mixture looks like somewhat crumbly (mealy).  Stir in almost all the milk or half and half.  If dough is not pliable, add just enough milk to make a soft, puffy, easy-to-roll dough. (Too much milk makes dough sticky, not enough makes biscuits dry.)  Transfer the dough to a lightly floured surface.  With a floured rolling pin, roll out to a 1/2-inch thickness.  Using a 3-inch round cookie cutter or small glass, cut out the biscuits.  Gather the scraps, roll them out and cut out the remaining biscuits.  Place the biscuits 1 inch apart on an ungreased baking sheet and bake until the tops are golden brown, about 15 minutes.
